
The Waldorf Astoria, Seychelles
The Waldorf Astoria Platte Island is an ultra-luxury retreat debuting in 2024, which offers an exquisite, nature-rich experience in the heart of the Seychelles.
About the project
The Waldorf Astoria wished to offer a true soil-to-soul dining experience by growing fresh, organic fruits and vegetables on-site. Cultivating organic fruits and vegetables on a sandy, sun-drenched island posed challenges, especially concerning soil quality. To address this, we focused on building and protecting healthy soil using permaculture techniques.
As the property already had garden beds in place, we adapted the permaculture design to harmonize with the existing layout.
The result: a flourishing 800-square-meter organic garden comprising of 45 beds, all designed to support a sustainable, high-quality culinary experience.
What we did
Soil cultivation
We enriched the soil with a sustainable mix of local chicken manure, native soil, and shredded coconut husks.







Soil protection
We preserved soil health by layering chipped coconut over cardboard mulch, retaining moisture and shielding it from direct sunlight. Lastly, we installed shade netting to further safeguard plants and soil after planting.






Enhanced pollination and biodiversity
Planted a diverse array of fruits, vegetables, herbs, and flowers to enhance pollination and biodiversity.


Organic herb & vegetable garden development
We established thriving fruit, vegetable, and herb gardens using lasagna bed and companion planting techniques
